Cinnamon Apple Lump Cake
Sometimes disasters can turn out to be delicious successes, so never give on an experiment until the dog won’t even eat it.
I started out to make cinnamon apple scrolls - simple I thought, just whip up a batch of cake dough, roll it out and fill it with apple and cinnamon mix. Then cut out the scrolls and pack them into a pie dish. But I made the cake dough too soft - it rolled out and I did manage to fill it and roll it up again, but the whole thing collapsed. No way I could cut the roll into neat little scrolls. So I got a spoon and piled it into the dish, baked it and it turned out perfect, even if I had to cut it rather than pull it apart.
Here is my simple recipe for the apple and cinnamon filling:
Four Granny Smith apples, peeled, cored and chopped; 1/2 cup caster sugar; as much cinnamon as you like (I like a lot!)
Put everything into a bowl and microwave it for three minutes. At last! I found something the nuker can do without ruining it.
